From July 1, 2023, this exclusive culinary retreat will be open and reservations for the summer are being accepted now.

The Pavyllon London is located in the Four Seasons Hotel London on Park Lane, a location of particular importance to the Four Seasons chain. It was the first hotel to open outside Canada in 1970, marking the beginning of a new definition of luxury.

The dishes that guests will enjoy reflect the revolutionary extraction method that Alléno has carefully developed over the past decade. This process involves cooking ingredients at a very specific time and temperature in a vacuum to extract their purest flavor. The ingredients are then cryoconcentrated to capture their essence. This results in richness of flavor, while reducing the content of sugar, fat and salt without affecting the taste.

Unique dishes that invite you to enjoy

Some of the memorable dishes on the menu include the organic “Badaboum” egg with Osciètre caviar, sorrel and Salish smoked salt, brioche-crusted sea bass quenelles with billy-by emulsion and mussels, and creamy poached lobster with potato-basil tuiles accompanied by white onion emulsion.
