The Italian capital of Rome has a new culinary gem in its repertoire: the gourmet restaurant Ineo at the Anantara Palazzo Naiadi Rome Hotel. The exclusive restaurant seats 28 in a stylish setting and features an elegant design that combines dark materials and gold accents.
Star chef Heros De Agostinis at the top
Under the leadership of chef and starred chef Heros De Agostinis, the Ineo awaits its guests with a refined selection of dishes. De Agostinis is constantly on the lookout for new trends and is influenced by different cultures and cuisines. His menus are inspired by his previous stints in international gourmet restaurants and luxury hotels, including the prestigious Lanesborough Hotel in London, where he cooked up his first Michelin star.
Signature dishes from around the world
Standout dishes at Ineo include raw red shrimp ceviche with mandarin oranges, tarragon oil and crispy pepper; spaghetti with salmon caviar; saddle of venison with cauliflower and raisins; and raspberry-rhubarb soufflé with white chocolate for dessert. The name Ineo comes from Latin and means “new beginning”.
25 years of experience in top gastronomy
The renowned chef De Agostinis looks back on 25 years of experience in top gastronomy and has already worked with greats such as Heinz Beck, Marc Veyrat, Joel Robuchon and Heinz Winkler, all of whom have Michelin stars. In the Ineo, he brings together the flavors and aromas of his previous stations.
De Agostinis draws inspiration for ingredients and flavors from markets around the world, particularly the nearby Esquilino Market in Piazza Vittorio Emanuele in Rome’s vibrant, multicultural district.
Elegant and contemporary design
The design of the Ineo is elegant and modern, with beige and green being the dominant colors, complemented by gold and plum blue accents. The chairs are made of grained leather and velvet, while the 1960s-style lamps were designed by Italian architect and designer Gae Aulenti. Fine marble from the province of Carrara adorns the floors and walls, and the tables are set with fine Limoges porcelain and Christofle cutlery.
